Why You Will Love This Recipe

  • Loaded properly: Real bacon, real cheese sauce – not a packet or a jar anywhere in sight.
  • Comfort food at its best: Salty, rich, crispy, creamy. Everything you want from loaded fries.
  • Perfect for sharing: Pile it all into one big dish and let everyone dig in.

Guaranteed success: The bacon must be genuinely crisp before it goes anywhere near the cheese sauce. Soft bacon will turn the whole dish greasy and flabby.

Detailed Method

Overall progress: 0 % done

Phase 1: Prep and Cut – 15 min

Equipment: Peeler, chopping board, chef’s knife, large bowl

1. Peel the potatoes and cut into 1 cm x 1 cm batons. Drop into a bowl of cold water as you cut. Cut the bacon into 1 cm strips and set aside.

VKB: All batons roughly the same thickness. Bacon strips roughly even in size.

Phase 2: Rinse, Soak and Dry – 30 min

Equipment: Large bowl, colander, clean tea towel

2. Rinse until the water runs clear, soak for 30 minutes in fresh cold water, drain and dry thoroughly.

VKB: Potatoes are completely dry to the touch.

Phase 3: Crisp the Bacon – 8 min

Equipment: Frying pan, slotted spoon, plate lined with kitchen paper

3. Put the bacon strips in a cold frying pan over medium heat. Cook for 6-8 minutes, stirring occasionally, until the bacon is deeply golden and genuinely crisp. Lift out with a slotted spoon onto kitchen paper. Reserve the bacon fat for another purpose.

VKB: Bacon is deeply golden and snaps when bent – not chewy.

Phase 4: Cheddar Sauce – 10 min

Equipment: Medium saucepan, whisk

4. Melt the butter in a medium pan over medium heat. Add the flour and whisk constantly for 1 minute. Pour in the milk in a slow stream, whisking constantly. Cook for 3-4 minutes until the sauce coats the back of a spoon. Remove from heat. Add the mustard, Worcestershire sauce and cheddar. Stir until smooth. Season. Keep warm.

VKB: Sauce is glossy, thick and smooth – no lumps, no graininess.

Phase 5: First Fry – 8 min

Equipment: Deep fryer or large heavy pan, thermometer, wire rack

5. Heat the oil to 140 °C. Fry the potatoes in batches for 6-8 minutes until pale and soft. Drain on a wire rack. Rest at least 15 minutes.

VKB: Fries are pale and bend easily.

Phase 6: Second Fry, Assemble and Serve – 4 min

Equipment: Deep fryer or large heavy pan, serving dish

6. Heat the oil to 180 °C. Fry the rested potatoes in batches for 2-3 minutes until deep golden and crisp. Salt immediately. Pile into a serving dish. Scatter over the crispy bacon. Pour the warm cheese sauce over the top. Finish with sliced spring onions and serve immediately.

VKB: Cheese sauce is running down the sides. Bacon is still crisp. Spring onions are bright green.

Required Equipment

Item Ideal size Alternative Risk
Deep fryer or heavy pan 4-5 litre Large wok or deep cast iron pan Too small = oil overflow
Frying pan 28 cm non-stick Cast iron skillet Bacon sticks to a cold pan
Saucepan 1.5 litre Non-stick pan Thin base = sauce burns

WAGUU Pro Level

  • Pro standard: Verified recipe with precise ratios and visual checkpoints.
  • Tip 1: Cook the bacon in a cold pan – it renders out more fat and crisps more evenly.
  • Tip 2: Use the bacon fat to start the roux instead of butter for an even richer sauce.
  • Tip 3: Add the crispy bacon to the cheese sauce right before serving – if it sits in the sauce it goes soft.
  • Tip 4: If you want a seriously loaded version, add jalapeños, black olives or a spoon of chipotle paste.

Food Science

Bacon is cured with salt and often smoked. Cooking it slowly from a cold pan renders out the fat, then the residual proteins undergo Maillard browning to give the characteristic crisp texture and savoury flavour. The cheese sauce is an emulsion of fat, protein and liquid held together by the roux. Together, the bacon and cheese sauce supply glutamate and salt, which activate umami and salt receptors and make the dish intensely savoury. The fries provide crunch and a neutral backdrop that lets the other elements shine.

FAQ

Why is my bacon chewy?

It was cooked too fast on too high a heat. Start in a cold pan over medium heat and give it time to render and crisp.

Can I use back bacon instead of streaky?

You can, but back bacon has less fat and will not crisp as well. Streaky is the right cut for this dish.

Can I make this vegetarian?

Yes – leave out the bacon and add crispy fried onions or mushrooms instead. Everything else stays the same.

Can I prepare parts in advance?

Yes. Crisp the bacon earlier and keep it at room temperature. Make the cheese sauce earlier and reheat gently with a splash of milk. Do the first fry earlier and hold the potatoes in the fridge.

WAGUU Petr’s Advice: Cooking for 6 or More?

6-8 people: Cook the bacon in two pans at once for speed. 10+ people: Cook bacon, make sauce and do the first fry in advance. Do the second fry in four batches just before serving. Assemble each batch separately to keep everything crisp.

Sides and Serving

Recommended sides:

Serving: Serve in a large shallow dish, everything piled together, with paper napkins on the side.

Storage and Reheating

Fridge: 2 days • Freezer: 3 months (fries before second fry; bacon not suitable for freezing) • Reheating: Fries and bacon in a hot oven at 200 °C for 5 minutes. Sauce gently with a splash of milk. Assemble fresh.

Most Common Mistakes

  1. Chewy bacon – cooked too fast on too high a heat. Start cold and go slow.
  2. Soggy fries – added the sauce too early or skipped the double fry.
  3. Grainy sauce – boiled the sauce or added cheese too fast.
  4. Adding bacon to the sauce – the bacon will lose its crunch. Scatter it over the top just before serving.
