Why you will love this recipe

  • Simple ingredients, big flavour: Potatoes, flour, poppy seeds, sugar, butter. Nothing exotic.
  • Satisfying to make: Rolling the dough into long thin ropes by hand is a skill worth learning.
  • Traditional: This is one of the oldest Slovak desserts, still made in villages today.

Why it works: The potato dough is rolled thin because a thin rope cooks quickly and stays tender. Once the šúľance float, their surface starch has set and they hold their shape. Butter melted over the hot rolls helps the poppy seed and sugar mixture stick to the surface, while the fat softens the sharp nuttiness of the poppy seeds.

Detailed method

Total progress: 0 % done

Phase 1: Preparing the potatoes – 15 min

Equipment: Peeler, saucepan, potato ricer, tray

1. Peel the potatoes and boil them in salted water for 15–18 minutes until tender. Drain and steam dry for 2 minutes. Pass through a potato ricer onto a tray and leave to cool completely to room temperature.

VKB: The mash is smooth, dry, and cool to the touch. No lumps, no visible steam.

Phase 2: Making the dough – 8 min

Equipment: Large bowl, wooden spoon, work surface

2. Put the cooled potatoes in a large bowl. Add 1 tsp salt and the egg (if using). Sift in the flour in three additions, mixing with a wooden spoon between each. Tip the dough onto a lightly floured surface and knead for 1–2 minutes until smooth. Do not overwork.

VKB: The dough is soft and slightly tacky. It holds together without crumbling. When pressed, the indentation slowly fills back.

Before you continue:

Do not use hot potatoes. Warm mash sticks to your hands and the dough will not roll into thin ropes.

Phase 3: Rolling and shaping – 15 min

Equipment: Work surface, knife

3. Divide the dough into 6 pieces. On a lightly floured surface, roll each piece by hand into a long rope about 1.5 cm thick. Cut each rope into 5 cm pieces. Roll each piece briefly between your palms to smooth it. Place on a floured tray, not touching each other.

VKB: The ropes are evenly thick, smooth, and do not crack. The 5 cm pieces hold their shape on the tray.

Phase 4: Boiling – 5 min

Equipment: Large pot, slotted spoon

4. Bring a large pot of salted water to a rolling boil. Add the šúľance in two batches. Boil for 3–4 minutes – they are done when they float to the surface and look slightly puffed. Remove with a slotted spoon and drain.

VKB: The šúľance float and are tender but not mushy. They hold their shape when lifted out with a slotted spoon.

Phase 5: Tossing with butter – 3 min

Equipment: Large bowl, spoon

5. Melt the butter in a small pan over low heat. Put the drained šúľance in a large bowl and pour the melted butter over them. Toss gently with a spoon so they are evenly coated.

VKB: Each piece is glossy with butter. No dry patches. The bowl smells of warm dairy.

Before you continue:

Add the poppy seeds while the šúľance are still hot. Cold butter does not hold the poppy seed mixture on the surface.

Phase 6: Coating with poppy seeds – 2 min

Equipment: Small bowl, large plate

6. Mix the ground poppy seeds with the caster sugar (and vanilla sugar, if using) in a small bowl. Tip the mixture onto a large plate. Roll the buttered šúľance in the poppy seed mixture until they are evenly coated. Serve warm.

VKB: The poppy seed mixture sticks to every surface. The šúľance look dark brown and glossy. They smell nutty and sweet.

Required equipment

Item Ideal size Alternative Risk
Potato ricer Standard, 24 cm Fine sieve or masher A masher leaves lumps that make the dough uneven
Large pot 5 litres, wide Two smaller pots A small pot forces you to cook in too many batches
Slotted spoon Standard Spider strainer A solid spoon traps water and makes the šúľance soggy

WAGUU Pro level

  • Pro standard: Verified recipe with exact proportions and visual checkpoints.
  • Tip 1: Roll the ropes by pressing lightly and moving your hands outward. Pressing too hard flattens the rope and the šúľance become uneven.
  • Tip 2: Use freshly ground poppy seeds. Pre-ground poppy seeds lose their aroma within a few weeks.
  • Tip 3: Toast the ground poppy seeds briefly in a dry pan before mixing with sugar. The flavour deepens noticeably.
  • Tip 4: Serve šúľance warm, not hot. Very hot šúľance will melt the butter too fast and the poppy seed coating will slide off.

Scientific background

The tenderness of šúľance comes from the same principle as potato dumplings: gelatinised potato starch binds the dough with only a little gluten. When the dough is rolled thin, the surface area to volume ratio increases, so the boiling water sets the surface quickly. This traps the interior moisture and keeps the šúľance soft. Poppy seeds are rich in oil and contain small amounts of morphine alkaloids, but in culinary quantities they are safe. Toasting the ground seeds causes Maillard reactions between their proteins and sugars, which is why toasted poppy seeds taste richer than raw ones.

Fine Dining – Professional techniques

  • Plate composition: Arrange five šúľance per portion in a fan on a warm plate. Dust with extra poppy seed mixture and add a small quenelle of sour cream on the side.
  • Texture contrast: Add a scatter of toasted walnuts or hazelnuts for a crunchy element.
  • Temperature contrast: Serve the šúľance warm with a spoon of cold sour cream.
  • Aromatic additions: Grated orange zest in the sugar mixture adds a fresh note.

Sensory radar

  • Appearance: Dark, glossy rolls coated in a black, speckled poppy seed and sugar mixture.
  • Aroma: Toasted poppy seeds, sweet butter, and a faint note of boiled potato.
  • Taste: Sweet, nutty, and slightly earthy from the poppy seeds. The potato base is mild and slightly sweet.
  • Texture: Soft and tender inside, with a slight resistance from the poppy seed coating on the outside.

Pairing

  • BEER: A light wheat beer or a fruit lambic for a more adventurous pairing.
  • WINE: A sweet white wine – Tokaji or a Muscat. Avoid dry wines with this dessert.
  • SOFT DRINK: Cold milk, tea, or žinčica (sheep whey).

Variations of preparation

  • With walnuts: Replace half the poppy seeds with ground walnuts. The flavour is softer and less earthy.
  • With cocoa: Mix 2 tbsp of cocoa powder into the sugar mixture for a chocolate version.

Allergens and dietary information

Contains: Gluten (plain flour), milk (butter), eggs (if used), poppy seeds • Gluten: Yes • Not suitable for: Coeliac disease, lactose intolerance, vegan diets

Suitable for

Dessert after a light meal, traditional Slovak Sunday lunch, sweet snack, family gatherings.

Substitution catalogue

  • Poppy seeds: Ground walnuts, almonds, or a mix.
  • Butter: Lard or a neutral oil for a dairy-free version (but the taste changes).
  • Plain flour: A gluten-free blend will work but the dough is harder to roll.

FAQ

Can I make šúľance ahead of time?

Yes. Boil them, toss in butter (without poppy seeds), and refrigerate. Reheat in a pan with a knob of butter, then coat with poppy seeds before serving.

Why did my šúľance break during boiling?

The dough was too soft or the water was not boiling hard enough. Add 1 tbsp of flour to the dough and make sure the water is at a rolling boil.

Can I freeze šúľance?

Yes, up to 2 months. Freeze boiled and cooled without the poppy seed topping. Reheat in boiling water for 2 minutes or in a pan with butter.

Can I use waxy potatoes?

No. Waxy potatoes give a dough that is too sticky and the šúľance lose their shape. Use floury varieties.

WAGUU Petr advises: Cooking for 6 or more?

6–8 people: Double the dough and boil in three batches. • 10+ people: Prepare the dough a few hours ahead and keep it covered in the fridge. Bring to room temperature for 20 minutes before rolling. Have one person roll while another boils – the traditional Slovak family method.

Sides and serving

Serving: Serve warm with a glass of cold milk or a light tea. A spoon of sour cream on the side is optional but traditional in some regions.

Storage and reheating

Fridge: 2 days (without topping) • Freezer: 2 months (boiled and cooled) • Reheating: In a pan with butter, 2 minutes per side. Or in boiling water for 2 minutes.

Most common mistakes

  1. Overworking the dough – The šúľance become chewy instead of tender. Knead for no more than 2 minutes.
  2. Rolling the ropes too thick – Thick ropes take longer to cook and stay doughy in the centre.
  3. Using cold poppy seeds – The butter will not hold them on the surface. Toast them briefly for better aroma.
  4. Boiling too many at once – The water cools and the šúľance stick together and tear.
